Looking for Peking duck

Here’s an email from a reader. Can anyone help?

I’ve come to Memphis (from Tokyo) to visit my parents for the holidays.  I saw your article in this morning’s newspaper, and I thought you might know where I can find some Peking Duck [I’m talking about the real thing:  whole duck prepared in the traditional manner, served with thin pancakes, sweet bean sauce, and julienned cucumbers/leeks (or reasonable equivalent)–Formosa’s Taipei Duck didn’t even come close].  If it needs to be ordered in advance, that’s not a problem.  (and if the restaurant also serves Shaoxing Chiew (the brown Chinese rice wine that is similar to an Oloroso Sherry), that would be a bonus).

Viet Hoa Food Market on Cleveland (Next to Lobster King) sells whole Peking duck (cooked on site) and you may be able to get it with similar accompaniments at the Lobster King but I’m not sure.

While we are asking questions, does any know where to buy chicken bones in bulk and fresh whole fois gras? Thanks!

Almost every Friday night, my husband orders Peking Duck at the Royal Panda restaurant in Germantown. It’s yummy with all the fixin’s.
While it takes just a little longer than a usual order, their specialty mussels, an appetizer, makes the wait very enjoyable.

The Peking Duck at Asian Palace both on Covington Pike and at 2075 Exeter in Germantown is served with homemade buns, bean sauce, julienned onions/cucumbers, etc. It is fabulous and is available w/out advanced notice.

I also enjoyed the duck at Royal Panda. Most of the people in the restaurant whenever I visit seem to be Chinese, so the food is probably pretty traditional.

Asian store at corner of White Station and Summer has flavorful duck for 12 dollars on the weekend, sans pancakes but with sauce.

Royan Panda and Asian Palace are the two best I have come up with here in Memphis since Bernard Chang’s last restaurant. Ching Chang, as I would call him was the best! We would also eat green onion pancakes with the duck which made it special. You won’t be able to get shaoxing here because it’s not legal in Tenn. But a few people come back from Calf. with bottles that they sneak in, so you may find it sometime, somewhere.
Call Mr. Wu at the Panda and he’ll do duck for you. Also he is probably the only one in town that does noodles by hand, the chinese way. Its a treat too watch him do it. Maybe at Chinese new year this year he’ll make them for us.

Gary, Mantia’s can order fresh whole foie gras for you, usually with one day’s notice. Grade A is running about $60/pound right now. You have to order a whole lobe which is 1 to 1-1/2 pounds. Grade B is a little less expensive but it’s such a pain to clean. Call us at 762-8560.
