Most importantly: If ANYONE has a cure for insomnia, you’ve got to tell me what it is. I sleep pretty much through the night maybe twice a week, but even on those nights I’m briefly awake one or two times. I’ve tried the prescription drugs and they’re unreliable. Plus, I remember what happened to poor Mary Richards–remember how Lou Grant had to tell her to get hold of herself? Pills to sleep and before you know it, you’re taking pills to wake up. It’s not pretty. So I’m not looking for mother’s little helper here–a nice natural remedy that works would be much appreciated, though, if you’ve got one.
So this morning I’m wide awake by 3 a.m. and I get out the computer and start looking at all the responses I received when I asked folks to tell me the best place to buy chicken salad. The taste testing will start next week and here are names that keep popping up. Above any others, Penny’s Pantry in Senatobia–they’ve either got a yummy chicken salad or a good PR person. There’s also the Wisteria Tea Room in Brunswick, the old Robilio’s grocery (now a Piggly Wiggly) at Summer and White Station, Wiles-Smith, Paradise in Regalia, Lenny’s, Costco’s rotisserie chicken salad, The Fresh Market (although Carole H specifically gives a thumbs down the Waldorf chicken salad there), and two versions made at the Mendenhall Kroger store. There are many others, but these keep popping up. And Holiday Ham, too. Over 100 people have emailed me about this–one woman sincerely thanked me for “taking on this important matter”!
What is it about this simple salad that inspires such loyalty? When the article comes out, late May or early June, I’ll share my favorite recipe (OK, more like a method with one constant–the Duke’s mayo). If you’ve got one, post it and I’ll give it a try.

I think getting up in the middle of the night & doing something constructive while you are wide awake is one of the best remedies for getting back to sleep. One of my medications in patch form is timed release & it keeps me awake. I seem to sleep a couple of hours & then wake up alert & not the least bit drowsy. Of course, the dr. says it normally makes everybody else sleepy, but nobody ever accused me of being normal. I usually take Tylenol PM & read for however long it takes to get back to sleep. Sometimes it’s as long as two hours, but two hours reading is better than two hours tossing & turning. My sister & I were discussing food for an upcoming baby shower at her home, & she makes pretty darn good chicken salad herself. But she had the Costco version at a party her friends gave & says it’s the best she’s ever eaten. So you’ve got another vote for that one.

I adore the chicken salad at La Baguette, on, what else, baguette bread. I like the chewy and soft textures together. Also, just tried Napa Cafe’s dijon grilled chicken salad and thought “yummy, maybe I should grill extra chicken and make it into a salad!”
My mother makes chicken salad and runs it through the cuisinart, which seems strange, but it tastes great. I like to add a bit of “sweet” when I do mine homemade, but NOT relish!! Sometimes honey mustard or sometimes a bit of sweet and sour sauce/duck sauce. Tastes great.

I searched everywhere at Costco today and couldn’t find the rotisserie chicken salad. Where do they hide it?
I often have difficulty getting to sleep and/or staying asleep due to anxiety and my mind’s tendency to run amok. I find that 1/2 an Advil PM with a small glass of wine an hour before bedtime does the trick most nights. I usually read until it’s time to turn out the lights, fall asleep quickly and USUALLY stay asleep thru the night.

Where is the CA coverage of the James Beard Awards? I would have thought that having an “almost local” nominee for best chef - John Currence of City Grocery in Oxford - would make it blogworthy.
Also Blackberry Farm in Walland TN got nods in the Best Chef category for John Fleer and in Outstanding Service category for Sam Beall. The awards are tonight (5/7/07). If the CA doesn’t have a story on the winners, I’m sure they will be posted at www.jamesbeard.org.
