Wally Joe is the new executive chef at the Brooks’ Brushmark Restaurant. No, he’s not closing his East Memphis restaurant, but will oversee the lunch program at the museum’s signature dining room, as well as planning special events.
This sounds like a great partnership… details to come.

Having cooked for a very stressful year at the Brooks, I’m glad to hear that they’ve got such a great plan — and a great Chef to carry out the plan. I can’t wait to go give it a try!

Wow! That is remarkable. I was very impressed with Penny’s work at the Brooks. She put a LOT of time and effort into it. We’ll have to see if WJ has that same committment. This will be interesting…

Hopefully I’ll finally have a place to lunch on upscale food when Wally gets this up and running.
Any word on how long before the revamp is complete and things are operational?

Great news! It can only be great for the Brooks to have one of the premier chefs in the South associated with them. Great food in a great setting. Can’t wait!
