Speaking of Whole Hog, Hays Smoke house from Lexington TN catered at my place of work! Living in West TN sure has perks!!!!
Its rare I rave about an item other than the catered BBQ, but their Potato Salad is to die for. It is the best Potato Salad I have had outside of homemade. The baked beans have real smoked BBQ pork like the old timey Baked Beans. The slaw is normal slaw. The BBO was very lean with a great smoked taste, ans as it always is in West TN, it is whole hog BBQ!
Now for those of you with that dream of eating REAL West Tennessee BBQ, Hays Smokehouse is opened Thursday Friday and saturday. The BBQ pork is served on Saturday.

I went onto the Southern Foodways Alliance website & printed out all the interviews that went into the making of the documentary, plus Joe York’s notes on the various BBQ spots they visited. It was interesting to note that one of the places, Papa Kay Joe’s near Centerville, serves homemade hoe cakes instead of buns with their chopped pork. That definitely caught my interest - never heard of it before. Anybody been there?
