Grilling: Not always about the meat

Last night, I made a variation of eggplant parm… entirely on my grill.

I blistered slices of eggplant, onion and tomato… doused the eggplant in some olive oil and stacked those veggies into a “napolean”… poured marinara on top and lots of imported reggiano.

It was so good… and probably relatively healthy.

Of course, I’ve really been craving a burger… what’s on the menu for the holiday weekend?
