Just got off the phone with the owner of The Cake Lady Bakery in Southaven, Miss., on Airways, just north of Goodman Road.
I was interviewing her for a story, but I went off topic to ask about this relatively new bakery’s signature desserts… the pie that keeps customers coming back is The Haystack, a graham cracker crust filled with sweetened condensed milk, cream cheese, coconut, pecans and caramel sauce…
A friend gave her the recipe, but she called it “the pie to die for”… why? Because she got the recipe at a funeral!
You can order a slice of Haystack at Payton’s on Highway 51, which The Cake Lady said has the absolute best steaks and best catfish in the region! Anybody been to Payton’s? I’ve always got my radar up for undiscovered gems, I’m surprised that I had never heard it mentioned…

I, too, would like to know more about this restaurant. I could find nothing on the web.
As far as the Haystack pie goes, it sounds a lot like the one I make, trying to copy Napa Cafe’s buttermilk pie. It is light and very easy to make. Fill a homemade or store-bought graham cracker crust with this filling:
1/2 can sweetened condensed milk
8 oz. cream cheese
a tub of Cool Whip
1/2 tsp. vanilla
1 Tbp. fresh lemon juice
Best refrigerated overnight, and one could add fruit and/or nuts, if desired.

It’s Peyton’s at 8046 Hwy. 51 close to the intersection of Rasco. It’s a small (nothing fancy) neighborhood grill. I’ve never been inclined to try it for the looks of the place. Think I might check it out now. As for the Haystack Pie its delicious. Just had our Christmas dinner at the D. Appeal had several of them. Delicious
