Unbelieveably good stuff…

…comes out of this humble kitchen, just across the road from Craig’s BBQ in DeValls Bluff, Ark., about an hour west of Memphis.

The menu is written out by hand at this one-woman operation… which has been featured on Jane and Michael Stern’s Road Food series on PBS. I inhaled half a small coconut pie, topped with airy meringue. It was the tender, flaky crust that made it really special, though. (Probably made with lard, a friend cracked. So? Fat is fat is fat… And did you see the recipe in The New York Times for gingersnaps made with bacon fat???)

I bought a very pretty pecan pie and slipped it into the freezer, hoping to have it after Christmas dinner.

Speaking of holiday feasting, I put out a call for easy appetizer recipes in The Commercial Appeal. Send them along here, too… That story will run Dec. 28.

Cream cheese, dried beef, rinsed, and horseradish to taste. Mix together and allow to sit in the refrigerator several hours for the flavors to meld. Sometimes I add a little sour cream to soften the mixture. Create on small rye breads or any type of cracker.

These are dips but can be spread on small toasts or crackers, too. They are simple and quick and ALWAYS huge hits. I always keep the ingredients on hand and they are quite addictive.

Version 1:

1 can of Rotel, drained
1 8 oz package of softened cream cheese (20 sec in microwave)
1 1 lb pkg of sausage, browned and drained

Version 2:
1 can of Rotel, drained
1 8 oz package of softened cream cheese
1 can of Shoepeg corn, drained
pinch of chili powder

For both: Combine all ingredients, microwave until warm (about 2-4 min depending on microwave) and serve. If you have extra time, place in glass dish and bake at 350 for 20 minutes until bubbly. You can change intensity by using hotter or milder Rotel and sausage. I leave out chili powder for kids. Serve with chips, breads, or crackers. A guaranteed hit!

Is there anything one cannot make with cream cheese? That said…Happi Stores in the Carrefour shopping center has some of the best chutneys, jams and toppings for cream cheese. With a jar of anything from there and a little imagination, you could easily come up with a new favorite.

Ah, yes, cream cheese. A quick, easy appetizer is to take 8 oz of cream cheese, 1/2 cup grated cojack cheese, about 1/4 cup of your-favorite-temperature salsa (more or less depending on how chunky and/or juicy it is), 1 tsp of cumin, and 1/4 tsp. of garlic…blend it all, spread it on flour tortillas, roll them up and slice into pinwheels. Makes a bunch, quickly.
